Magic Tomato Salad
Ingredients:
4 large ripe tomatoes (preferably heirloom or vine-ripened), chopped
1 small red onion, thinly sliced
1 cucumber, peeled and diced
A handful of fresh basil leaves, torn
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar (or red wine vinegar)
1 teaspoon honey or maple syrup (optional, for a touch of sweetness)
Salt and freshly ground black pepper, to taste
Optional: 1/4 cup crumbled feta cheese or fresh mozzarella balls
